You'll definitely find more Pokémon that evolve by level than Stones, trading, and other methods. Besides Eevee, you won't find many branching evolutions, either.

Off the top of my head, there's just Slowpoke, Ralts, Snorunt, Oddish, Clamperl, Wurmple, and Tyrogue.
